Nicolas Herman, pastry chef, studied at ITMA. He quickly joined the professional world at Neuhaus before joining Yves Matagne at the Sea Grill. He then flew to Australia where he spent 2 years working on various culinary projects including the development of a range of pralines for a Chocolatier. After a year of traveling in Asia, returning to Belgium, he then collaborated with Frédéric Blondeel before presenting his creations in “La maison d’Hôtes” in Silly run by one of his childhood friends. Given the success encountered, the two of them decided to found “l’Atelier de Nicolas” and to develop the product range and the brand.
